Savory Braised Donggeurang-ttaeng
Rice-Stealing Donggeurang-ttaeng with a Bulgogi-like Flavor
Donggeurang-ttaeng is delicious even when simply pan-fried, but sometimes you might want a change. This recipe adds a sweet and savory glaze that transforms it into an even tastier dish! The rich flavor, reminiscent of tteokgalbi (rib patties), makes it a perfect companion for rice, so much so that you’ll find yourself reaching for seconds.
Main Ingredients
- 25 pieces of store-bought Donggeurang-ttaeng
- 1 Tbsp minced garlic
- 1 Cheongyang pepper
- A pinch of sesame seeds
Braising Sauce
- 3 Tbsp soy sauce (jin-ganjang)
- 2 Tbsp rice wine (mirin)
- 1.5 Tbsp corn syrup (mulyeot)
- 5 Tbsp water
- A pinch of black pepper
- 3 Tbsp soy sauce (jin-ganjang)
- 2 Tbsp rice wine (mirin)
- 1.5 Tbsp corn syrup (mulyeot)
- 5 Tbsp water
- A pinch of black pepper
Cooking Instructions
Step 1
First, finely mince the garlic. Remove the stem from the Cheongyang pepper, wash it, and finely chop it. If you prefer less spice, you can substitute with bell pepper.
Step 2
In a small bowl, combine all the braising sauce ingredients: 3 Tbsp soy sauce, 2 Tbsp rice wine, 1.5 Tbsp corn syrup, 5 Tbsp water, and a pinch of black pepper. Mix well until fully incorporated. Using corn syrup instead of sugar adds a lovely sheen to the finished dish.
Step 3
Heat a wide pan over medium heat. Arrange the Donggeurang-ttaeng pieces in the pan, making sure they don’t overlap.
Step 4
Pan-fry the Donggeurang-ttaeng until golden brown on both sides. Frying them until crispy on the outside will allow them to absorb the sauce better, resulting in a more savory and delicious taste. Once cooked, transfer the Donggeurang-ttaeng to a paper towel-lined plate to drain excess oil.
Step 5
In the same pan (after draining the oil), pour in the prepared braising sauce.
Step 6
Bring the sauce to a simmer. Add the minced garlic and chopped Cheongyang pepper to the simmering sauce for enhanced flavor.
Step 7
Once the sauce is bubbling, carefully add the pan-fried Donggeurang-ttaeng into the sauce.
Step 8
Reduce the heat to medium-low. Gently stir the Donggeurang-ttaeng with a spatula to ensure they are evenly coated with the sauce and to allow the sauce to thicken. Continue simmering until the sauce is reduced and glossy, then turn off the heat.
Step 9
Transfer the finished braised Donggeurang-ttaeng to a serving plate. Sprinkle with sesame seeds for an extra nutty aroma and appealing garnish. Enjoy your delicious meal!
