How to Make Delicious Braised Eggs – The Perfect Side Dish!
Do you love egg dishes? Eggs, nature’s perfect food, are often enjoyed as rolled omelets, steamed eggs, or scrambled eggs. Today, we’re preparing a delightful braised dish using eggs, radish, and a savory soy sauce-based glaze. Introducing our flavorful braised eggs, a classic Korean side dish!
Main Ingredients- 7 Eggs
- 250g Radish
- 1 handful Frying peppers (Ggwari peppers)
- Salt
- 450ml Water
Braising Sauce- 3 Tbsp Soy Sauce
- 3 Tbsp Corn Syrup (or Rice Syrup)
- 2 Tbsp Mirin (Rice Wine)
- 1 piece Dried Kelp (about 5x5cm)

Cooking Instructions
Step 1
First, thoroughly wash the radish and cut it into four equal pieces. Radish aids digestion and helps cleanse the intestines. It’s also known to help with fever and soothe coughs or sore throats. Next, trim the stems off the frying peppers and rinse them under cold running water. Pat them dry gently.
Step 2
In a pot, add water and place the eggs along with a pinch of salt (this helps the shells peel more easily). Boil the eggs over medium-high heat until they are hard-boiled. Once cooked, immediately transfer the boiled eggs to a bowl of cold water to cool them down. This step makes peeling much easier. Peel the cooled eggs and set them aside.
Step 3
In a clean pot, pour in 450ml of water, add the cut radish and the piece of dried kelp. Bring to a boil over medium heat. Once the water starts boiling, remove the kelp after about 5 minutes to prevent a bitter taste. Simmer until the radish becomes translucent and tender. Once the radish is cooked, stir in 3 Tbsp soy sauce, 3 Tbsp corn syrup, and 2 Tbsp mirin. Add the peeled eggs to the pot and continue to simmer over medium-low heat.
Step 4
When the braising liquid has reduced by about half, add the prepared frying peppers and continue to simmer everything together. To ensure the flavors meld evenly, periodically spoon the braising liquid over the eggs, radish, and peppers. This will infuse them with flavor and give them a beautiful sheen.
Step 5
Continue to simmer gently until the braising liquid has thickened slightly and coats the ingredients well. Be mindful of the heat to prevent the sauce from drying out completely. Turn off the heat when the sauce is still slightly glossy and abundant – you don’t want it too dry!
Step 6
Serve the finished braised eggs on a plate. For an appealing presentation, you can cut each egg in half, revealing the vibrant yolk. Enjoy this delicious side dish with a bowl of warm rice – it’s a perfect match!
