Nourishing Mussel and Soybean Paste Soup- 1 Potato, cubed
- 1/2 Onion, sliced
- 1/2 King Oyster Mushroom, sliced
- 1 Korean Green Chili Pepper, sliced (optional, for heat)
- A pinch of Carrot, diced
- 100g Mussels, cleaned
- 1/2 Green Onion, chopped
- 1 Tbsp Minced Garlic
Sweet and Savory Braised Flatfish- 1 Flatfish (or similar white fish), cut into pieces
- 1/5 Korean Radish (Daikon), sliced
- 1/2 Green Onion, sliced diagonally
- 1 Korean Green Chili Pepper, sliced diagonally (optional)
- 2 Tbsp Soy Sauce
- 2 Tbsp Corn Syrup (or sugar)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Mirin (rice wine)
- 1 Tbsp Minced Garlic
- 2 Cups Broth (or water)
- A pinch of Sesame Seeds
Crispy Stir-fried Shredded Potatoes- 1 Potato, julienned
- 1/2 Onion, julienned
- 1/2 King Oyster Mushroom, julienned

- Cooking Oil, as needed

Cooking Instructions

Bring the broth to a boil, then dissolve the soybean paste by sifting it through a fine-mesh sieve into the pot. Add the cleaned mussels and simmer until they open and are cooked through. Be careful not to overcook, as they can become tough.

Finally, stir in the minced garlic, diagonally sliced green onion, and the optional Korean green chili pepper for a touch of heat. Simmer for another moment to let the flavors meld. Your nourishing mussel and soybean paste soup is ready!
