- 3 handfuls fresh anchovies (approx. 300g)

Braising Sauce
- 3 Tbsp Soju (for removing fishiness)
- 2 Tbsp Vinegar (adds tanginess and reduces fishiness)
- 2 Tbsp minced garlic
- 3 stalks green onions (chopped)
- 1 Korean green chili pepper (chopped, seeds removed for less heat)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Fish Sauce (anchovy or sand lance)
- 1 Tbsp Soy Sauce (for soup or regular)
- 1 Tbsp Plum Extract (for sweetness and depth)
- 1 Tbsp Cooking Wine (Mirin)
- 1 Tbsp Doenjang (fermented soybean paste, for umami)
- 1/3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soju (for removing fishiness)

Cooking Instructions
Step 1
Prepare the fresh anchovies by removing their heads and guts. Rinse them 3-4 times under running water. To eliminate any fishy odor, add 3 Tbsp of Soju and 2 Tbsp of vinegar to the anchovies, gently mix, and rinse again. This step is crucial for a clean, delicious taste.
Step 2
In a bowl, combine all the braising sauce ingredients: minced garlic, chopped green onions, chopped chili pepper, gochugaru, fish sauce, soy sauce, plum extract, cooking wine, doenjang, and gochujang. Mix everything thoroughly until well combined to create a flavorful sauce.
Step 3
Thinly slice the onion and spread it evenly across the bottom of a wide pot or pan. This layer will prevent the anchovies from sticking and burning, while also infusing them with sweetness during cooking.

Arrange the prepared fresh anchovies neatly over the bed of sliced onions. Pour the mixed braising sauce evenly over the anchovies. Add 1.5 cups (approx. 300ml) of water, pouring it gently around the edges of the pot. Bring to a boil uncovered over medium-high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 10-15 minutes, or until the anchovies are tender and the sauce has thickened. Gently turn the anchovies halfway through cooking to ensure even coating.
