I braised fresh green beans, bought from the market, in a soy sauce-based glaze. This makes a fantastic side dish for any meal. Westerners often prefer them sautéed in butter, but this Korean-style braising brings out a wonderful savory-sweet flavor that pairs perfectly with rice. The crisp-tender texture is delightful!
Main Ingredients- Green beans (string beans) 200g
- Water for blanching, as needed
Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Wash the fresh green beans thoroughly, trim off the tough ends, and pat them dry.

Bring a pot of water to a boil. Add the prepared green beans and blanch for about 1-2 minutes until they turn bright green and slightly tender-crisp. Be careful not to overcook them. Immediately drain the green beans and rinse them under cold water to stop the cooking process. Drain well.
Step 3
In a pan, combine the soy sauce (2.5 Tbsp), mirin (1 Tbsp), sugar (0.5 Tbsp), corn syrup (1 Tbsp), and cooking oil (1 Tbsp). Place the pan over medium-low heat and stir gently until the sugar dissolves, creating the braising sauce.
Step 4
Once the sauce is simmering, add the blanched green beans to the pan. Toss them gently to ensure they are evenly coated with the sauce. Cover the pan with a lid and let the green beans simmer on low heat for about 5-7 minutes, or until tender-crisp and the sauce has slightly reduced. Stir occasionally to prevent sticking.
Step 5
When the green beans are cooked through and the sauce has thickened to a glossy glaze, turn off the heat. Sprinkle generously with toasted sesame seeds for a nutty aroma and flavor.
