- 2 Tbsp Mirin (rice wine)
- 1.5 Tbsp Minced garlic
- A pinch of Black pepper
- 5 Tbsp Soy sauce
- 2.5 Tbsp Gochugaru (Korean chili powder, adjust to spice preference)
- 2 Tbsp Oligodang (corn syrup or rice syrup, adjust sweetness)
- 2 Tbsp Mirin (rice wine)
- 1.5 Tbsp Minced garlic
- A pinch of Black pepper
Cooking Instructions
Step 1
First, wash the radish thoroughly under running water to remove any dirt, then slice it into half-moon shapes about 1 cm thick. Trim the outer layers of the green onion, wash it, and then slice it diagonally. Remove the stems from the green chili pepper, wash it, and slice it diagonally.
Step 2
Now, let’s prepare the key sauce for this delicious mackerel pike stew! In a wide bowl, combine the soy sauce, gochugaru, oligodang, mirin, minced garlic, and black pepper. Mix them well with a spoon until evenly combined. If you’re using frozen mackerel pike, make sure to thaw it completely before cooking. Rinse it under cold running water, remove the innards and fins, and cut it into bite-sized pieces.
Step 3
In a deep pot, arrange the sliced radish at the bottom, ensuring it’s not overlapping too much. Place the cleaned mackerel pike pieces on top of the radish, and artfully arrange the sliced green chili peppers over the fish. Using plenty of radish in mackerel or mackerel pike stews is wonderful because as it cooks, the radish becomes incredibly soft and absorbs all the delicious flavors of the sauce, making it a delightful side component.
Step 4
Pour the prepared sauce evenly over the fish and radish. Add enough water to cover the ingredients about halfway. Cover the pot with a lid and bring it to a boil over medium heat. As the stew simmers, periodically open the lid and spoon some of the sauce over the fish and radish to ensure the flavors are distributed evenly. Continue to simmer until the sauce thickens slightly.
Step 5
Once the radish appears translucent and the mackerel pike is fully cooked, add the diagonally sliced green onions to the pot. Let it simmer for another minute or two, allowing the green onions to release their aroma into the stew, then turn off the heat. Adding the green onions towards the end prevents them from becoming too soft and mushy.
Step 6
Serve the finished mackerel pike stew generously over warm rice. A final garnish of the diagonally sliced green onions adds a beautiful touch and enhances the presentation. Enjoy this delightful and comforting dish!
