However, with age, I’ve come to savor the rich taste of mackerel and, even more so, the incredibly delicious radish that soaks up all the savory sauce. This dish is a true comfort food that makes you want to finish your rice in no time!

  • 2 fresh mackerels, cleaned
  • 1/4 Korean radish (about 300g)
  • 1/2 stalk green onion
  • 1 chili pepper (e.g., jalapeño or red chili), optional
  • 3 cups water

Braising Sauce

  • 4 Tbsp soy sauce
  • 4 Tbsp gochugaru (Korean chili flakes)
  • 1/3 Tbsp fish sauce (anchovy or sand lance)
  • 2 Tbsp cooking wine or soju
  • 2 Tbsp minced garlic
  • 1 Tbsp sugar or corn syrup (optional, adjust sweetness)
  • Pinch of ginger powder or 1/2 tsp minced ginger (optional)

Cooking Instructions

First, cut the radish into large, bite-sized pieces, about 1cm thick. Arrange the radish slices evenly at the bottom of a pot. Pour in 3 cups of water and 1/4 cup of soy sauce. Bring to a boil over high heat, then reduce to medium-low heat. Let it simmer for about 10-15 minutes, or until the radish becomes slightly translucent and tender. This step is crucial for infusing the radish with initial flavor.

Prepare the braising sauce that will give this dish its signature flavor. In a bowl, combine 4 Tbsp soy sauce, 4 Tbsp gochugaru, 1/3 Tbsp fish sauce, 2 Tbsp cooking wine (or soju), and 2 Tbsp minced garlic. Mix well until thoroughly combined. If you prefer a sweeter sauce, add 1 Tbsp of sugar or corn syrup. For an extra layer of flavor and to reduce any fishy odor, you can also add a pinch of ginger powder or 1/2 tsp of minced ginger.
