Main Ingredients- 300g Raw Peanuts
- 1 piece Dried Kelp (Kombu, approx. 5cm x 5cm)
Seasoning Ingredients- 7 Tbsp Soy Sauce
- 2 Tbsp Cooking Sake (Mirin or similar)
- 2 Tbsp Plum Extract (Maesilcheong)
- 1 Tbsp Olive Oil
- 2 Tbsp Corn Syrup (or Rice Syrup)
- 1 Tbsp Toasted Sesame Seeds
- 7 Tbsp Soy Sauce
- 2 Tbsp Cooking Sake (Mirin or similar)
- 2 Tbsp Plum Extract (Maesilcheong)
- 1 Tbsp Olive Oil
- 2 Tbsp Corn Syrup (or Rice Syrup)
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
Place the raw peanuts in a pot and add enough water to cover them completely. Bring to a boil over high heat. This step helps to soften the peanuts.
Step 2
Drain the peanuts from the boiling water and rinse them thoroughly under cold running water. Repeat this process of boiling and rinsing two more times, for a total of three times. This crucial step removes any astringency or raw taste from the peanuts, resulting in a much cleaner and more delicious flavor. Any leftover peanuts that won’t be used immediately can be drained, stored in an airtight container, and frozen for later use.
Step 3
Return the rinsed peanuts to the pot and add fresh water, ensuring the peanuts are submerged. Bring to a boil over high heat and cook for 6 minutes. After 6 minutes, remove and discard the piece of kelp. Be careful not to overcook the kelp, as it can release a bitter flavor.
Step 4
Now, it’s time to add the delicious braising sauce. Combine 7 tablespoons of soy sauce, 2 tablespoons of cooking sake, 1 tablespoon of olive oil, 2 tablespoons of plum extract, and 2 tablespoons of corn syrup in the pot with the peanuts. Reduce the heat to medium-low and let the sauce simmer and reduce, allowing the flavors to meld with the peanuts. Stir occasionally with a spatula as the liquid thickens and reduces until it is almost gone. Be mindful not to let it cook down too much and burn.
Step 5
Just before turning off the heat, sprinkle in 1 tablespoon of toasted sesame seeds for an extra nutty aroma and flavor. Stir well to combine. Your delicious braised peanuts in soy sauce are now ready! They are incredibly tasty served over warm rice.
