Step 1
First, prepare the ingredients for delicious soy-braised potatoes. This recipe involves stir-frying the potatoes before braising, so the key is to maintain their fluffy texture without them falling apart.
Step 2
Peel the potatoes, wash them thoroughly, and cut them into 1.5cm cubes. Cutting them too small can cause them to break apart during cooking, so aim for a moderate size. Slice the onion thinly and thinly slice the chili peppers diagonally, removing the seeds.

Heat 2 tablespoons of cooking oil in a frying pan over medium-low heat. Add the cubed potatoes and begin to stir-fry. Cook for about 5 minutes, or until the surface of the potatoes becomes slightly translucent. Stir occasionally to prevent them from sticking.

Once the potatoes are about 1/3 cooked and starting to turn translucent, carefully add 1/3 cup (approx. 60ml) of water. Once the water boils, add 2 tablespoons of soy sauce and 1 teaspoon of oligosaccharide, stirring well to coat the potatoes. Cover the pan and simmer over medium heat until the potatoes are about halfway cooked.

When the potatoes are semi-cooked and translucent, add the sliced onion and diagonally sliced chili peppers. Reduce the heat to low and continue to cook for another 5-7 minutes, allowing the sauce to reduce and the potatoes to absorb the flavor. Stir occasionally to prevent burning and adjust the heat as needed.

Once the sauce has nearly reduced and the potatoes look glossy, sprinkle 1 teaspoon of sesame seeds on top. Stir gently to combine, and your fluffy and delicious soy-braised potatoes are ready! Serve them over warm rice for a delightful meal.
