Savory Braised Potatoes: A Simple Korean Side Dish
The Ultimate Rice Companion! How to Make Deliciously Braised Potatoes
Are you aware of the amazing quality of potatoes from Gangwon Province these days? I was fortunate enough to get my hands on some before the prices surged, and now I have 10kg to enjoy! To start using them up, I decided to make a classic side dish: braised potatoes. This dish is a perfect match for rice, making every meal more satisfying. It’s simple to prepare with just a few ingredients, so why not add it to your table this weekend?
Main Ingredients- 8 medium-sized potatoes
- A small amount of green part of scallion (or leek)
- A pinch of sesame seeds
- A pinch of black pepper
Cooking Instructions
Step 1
For delicious braised potatoes, prepare 8 medium-sized potatoes. Wash them thoroughly and cut them into 12 equal pieces, about 2-3 cm in size. Cutting them too small might cause them to break apart during cooking, so aim for a substantial chunk.
Step 2
Place the cut potatoes in cold water and soak for about 10 minutes to remove excess starch. This step helps to create a cleaner texture and allows the sauce to penetrate better.
Step 3
Heat a pan over medium-high heat and add about two drizzles of cooking oil. Ensure enough oil is used to prevent the potatoes from sticking and to help them achieve a nice golden hue.
Step 4
Add 10 Tbsp of soy sauce and 2 Tbsp of oligosaccharide to the pan. Pour in enough water to generously cover the potatoes, creating your braising liquid. This blend creates a balanced sweet and savory flavor.
Step 5
Bring the mixture to a boil over high heat and let the potatoes simmer, absorbing the sauce. To prevent sticking, gently stir the potatoes once or twice with chopsticks or a spatula as the sauce reduces. This process infuses the potatoes with a wonderful flavor.
Step 6
The key to this recipe is to continue braising over high heat until the liquid has significantly reduced! This high-heat method ensures the potatoes remain intact and retain a firm, pleasant texture while absorbing the delicious seasoning deep within. Don’t forget to keep the heat high!
Step 7
If you have scallions, chop the green parts finely. If not, use the green parts of a regular leek. The aromatic onion flavor will further enhance the taste of the braised potatoes.
Step 8
Finally, add the chopped green onions (or leek) to the pan. Sprinkle with black pepper and sesame seeds, then gently stir once more. This final touch results in beautifully glazed, non-mushy braised potatoes. Serve hot with steamed rice and enjoy!
