  • 1 small onion

  • 3 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (or rice syrup)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp cooking oil (olive oil can be used)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • 1/2 cup water

First, prepare the ingredients by peeling and cutting the potatoes and onion for easy cooking.

Peel the potatoes and cut them into approximately 2cm cubes. Cut the onion in half, then slice it into pieces similar in size to the potatoes. To remove excess starch, soak the cut potatoes in cold water for about 5 minutes. Afterward, drain them thoroughly in a colander. This step helps the potatoes maintain their shape and prevents them from becoming mushy during braising.

In a small bowl, combine 3 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup, 1/2 Tbsp minced garlic, 1 Tbsp cooking oil, and 1/2 cup water. Mix well. Pour this mixture into a pot and bring it to a boil.

Once the sauce begins to boil, add the prepared potatoes to the pot. Increase the heat to high and braise the potatoes, stirring occasionally, until the sauce starts to coat them evenly.

When the sauce has reduced by about half, lower the heat to medium-low. Continue to simmer gently; this slow braising allows the soy sauce flavor to penetrate the potatoes more deeply.
