Main Ingredients

  • 2 medium potatoes
  • 10 large dried anchovies
  • 1 green chili pepper

Seasoning Sauce

  • 3 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp chopped green onions
  • 1 tsp minced garlic
  • A little sesame oil
  • A little black pepper

Cooking Instructions

Step 1

Begin by peeling the potatoes and washing them thoroughly under running water to remove any dirt or impurities. This ensures a clean and pleasant texture in the final dish.

Step 1

Step 2

Cut the peeled potatoes into bite-sized pieces, about 2cm thick. This size is perfect for enjoying with rice and ensures even cooking.

Step 2

Step 3

Soak the cut potatoes in cold water for about 5 minutes. This step removes excess starch from the potatoes, preventing them from sticking together during cooking and keeping the sauce clear.

Step 3

Step 4

In a small bowl, combine all the seasoning sauce ingredients: 3 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp cooking wine, 1 Tbsp chopped green onions, and 1 tsp minced garlic. Whisk them together until well blended to create a flavorful sauce base.

Step 4

Step 5

Prepare the large dried anchovies by removing their heads and innards. Gently separate the flesh from the bones. This preparation helps to reduce any fishy odor and brings out the anchovies’ natural savory taste.

Step 5

Step 6

Finely chop the green chili pepper. Remove the stem before slicing. You can adjust the amount of chili pepper according to your preference for spiciness.

Step 6

Step 7

Lightly oil a pan over medium heat. Add the drained potatoes and sauté them until they begin to turn translucent. Sautéing the potatoes first helps them absorb the sauce better later on.

Step 7

Step 8

Once the potatoes are partially cooked, pour in the prepared seasoning sauce. Add the prepared anchovy pieces and 2/3 cup of water. Braise the mixture, gently shaking the pan or stirring occasionally, until the sauce thickens and coats the potatoes and anchovies. Just before finishing, add the chopped green chili pepper and cook for another minute to allow its flavor to meld. This adds a touch of freshness and heat.

Step 8

Step 9

Serve this delicious braised potato and anchovy dish warm. The comforting combination of the anchovies’ umami and the potatoes’ soft texture is sure to be a hit!
