Savory Braised Roasted Eggs with Korean Hot Peppers

Even though I’ve been diligently preparing side dishes lately, it often feels like there’s never anything to eat! I received a whole tray of roasted eggs and wondered what to make with them. I decided to braise them with Korean hot peppers.

Main Ingredients

  • 12 roasted eggs
  • 1 package Korean hot peppers (about 200g)

Cooking Instructions

First, peel the shells off the 12 roasted eggs. Be gentle when peeling to avoid breaking the eggs.

Wash the Korean hot peppers thoroughly and trim off the stems. If the peppers are large, you can cut them in half. (If you like a bit of heat, make a small slit in the peppers.)

Place all the peeled roasted eggs in a wide pot. Add 1 cup of water, 10 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp plum extract, and 2 Tbsp oligosaccharide. Stir gently to combine the sauce ingredients.

Place the pot over medium heat and simmer until the braising liquid is reduced by about half. Roll the eggs occasionally to ensure they are evenly coated with the sauce. This step helps the eggs become chewier and develop a delicious color.

Once the liquid has reduced sufficiently, add the washed Korean hot peppers to the pot. Continue to simmer, stirring occasionally, for about 3-5 minutes, or until the peppers are slightly softened but not mushy. Ensure the peppers absorb the sauce well.

Finally, add a pinch of black pepper and sprinkle with sesame seeds to finish. Once all the ingredients are well coated with the sauce, your delicious braised roasted eggs with Korean hot peppers are ready! Enjoy with a warm bowl of rice.
