Braising Sauce

  • 2/3 Tbsp Gochugaru (Korean chili flakes, approx. 7g)
  • 1.5 Tbsp Soy Sauce (approx. 20ml)
  • 1 Tbsp Minced Garlic (approx. 15g)
  • 1.5 Tbsp Chopped Scallion (approx. 20g)
  • 1 tsp Mirin (or Rice Wine, approx. 5ml)
  • 1 tsp Toasted Sesame Seeds (approx. 3g)
  • 2/3 Cup Water (approx. 130ml)
  • Pinch of Salt
  • Pinch of Black Pepper

Cooking Instructions

Cut the block of tofu into bite-sized pieces, about 1.5-2cm thick (e.g., into 4 or 6 pieces). Place the cut tofu on a layer of paper towels and gently press both sides to absorb excess moisture. This step helps prevent the tofu from breaking apart during cooking and allows the sauce to adhere better. Lightly season the surface of the drained tofu with a pinch of salt and pepper for enhanced flavor.

Heat 1.5 Tbsp of cooking oil in a non-stick skillet over medium heat. Carefully place the seasoned tofu pieces in the heated oil. Pan-fry the tofu for about 10 minutes, turning occasionally, until each side is golden brown and slightly crisp. This process adds a delightful texture and prepares the tofu to absorb the braising liquid.

While the tofu is frying, thinly slice the half onion into strips. Slicing it slightly thicker than paper-thin can be beneficial for retaining some texture. Place the sliced onions at the bottom of a pot or a deep skillet. The onions will soften and sweeten as they cook, also serving as a buffer to prevent the tofu from sticking to the bottom.

Arrange the golden-brown pan-fried tofu pieces neatly on top of the bed of sliced onions. Try to avoid overlapping the tofu too much so that the sauce can reach all sides evenly.

Now, let’s prepare the delicious braising sauce. In a small bowl, combine the gochugaru, soy sauce, minced garlic, chopped scallion, mirin, and toasted sesame seeds. Mix them thoroughly. (Do not add the water, salt, or pepper at this stage.)

Spoon the prepared sauce mixture over the pan-fried tofu pieces, ensuring an even coating. After applying the sauce, carefully pour the 2/3 cup of water around the edges of the pot. Be precise with the water measurement, as too much can dilute the flavor.

Cover the pot with a lid and bring the liquid to a boil over medium-high heat. Once it starts bubbling vigorously, reduce the heat to low. Simmer gently for about 15-20 minutes, partially uncovering the lid (to allow steam to escape), until the sauce has reduced and is coating the tofu. Basting the tofu with the simmering sauce occasionally will enhance the flavor.
