Savory Braised Tofu (Baek Jong Won Style)

Today, we’re making Baek Jong Won’s style of braised tofu! Many of you are spending more time at home these days, and while tofu is a familiar dish, I’ll share how to make it even more delicious! Get ready for a flavor explosion!

Main Ingredients

  • 1 block Firm Tofu (approx. 290g)
  • 1 Tbsp Perilla Oil (Deulgireum)

Cooking Instructions

Step 1

First, gently press the tofu to remove excess water. Then, slice it into approximately 1cm thick pieces. Make sure to slice them evenly; too thin and they might break apart.

Arrange the sliced tofu in a single layer at the bottom of a pot or deep pan. Overlapping them slightly is okay, but aim for a neat arrangement so the sauce can evenly penetrate each piece.

Before adding all the seasonings, pour 1 cup of water (200ml) into the pot and add 1 Tbsp of fermented shrimp. Bring this mixture to a rolling boil. Boiling the fermented shrimp first helps to mellow its strong flavor and aroma, creating a richer umami base.

Once the water is boiling, add the coarse gochugaru (2 Tbsp), brown sugar (1/3 Tbsp), minced garlic (1/2 Tbsp), and a small pinch of minced ginger. Stir well to combine and form the sauce. Finally, add the chopped Korean chili pepper and green onions.

As the sauce begins to reduce over medium-low heat, lower the flame and drizzle in 1 Tbsp of perilla oil. The perilla oil will add a wonderful nutty aroma and enhance the savory flavor of the tofu.

Continue to simmer until the sauce has thickened and coats the tofu nicely, creating a ‘sizzling’ consistency. Serve immediately and enjoy mixing it with your rice or as a side dish. This dish is perfect for those times when your appetite needs a little boost!
