Tuna and Radish Simmer (Chamchi Mu Jorim)

Main Ingredients- Radish (Mu) 420g (approx. 1/3 medium)
- Canned Tuna 180g (1 can)
- Onion 1/2 medium
- Green Onion 1 stalk
- Dried Kelp (Dashima) 2 pieces (10*10cm)
- Water 420ml (approx. 1.75 cups)
- Toasted Sesame Seeds, a pinch (for garnish)
Braising Sauce- Soy Sauce (Jin-ganjang) 4 Tbsp
- Soup Soy Sauce (Guk-ganjang) 2 Tbsp
- Cooking Wine (Mirin) 3 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp
- Red Pepper Flakes (Gochugaru) 3 Tbsp
- Black Pepper, a pinch
- Soy Sauce (Jin-ganjang) 4 Tbsp
- Soup Soy Sauce (Guk-ganjang) 2 Tbsp
- Cooking Wine (Mirin) 3 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp
- Red Pepper Flakes (Gochugaru) 3 Tbsp
- Black Pepper, a pinch
Cooking Instructions
Step 1
Begin by preparing the main ingredients. Peel the radish and cut it into thick, bite-sized pieces, about 1.5-2 cm thick, either half-moon or cubed shapes. Slice the onion thickly or cube it. Chop the green onion into bite-sized pieces.
Step 2
In a pot or deep pan, add 420ml of water and the 2 pieces of dried kelp. Bring the water to a boil, then let it simmer for about 5 minutes to infuse the broth with the kelp’s umami flavor. Carefully remove and discard the kelp.
Step 3
Once the water is boiling, turn off the heat and remove the dried kelp. Add all the braising sauce ingredients to the pot: 4 Tbsp Soy Sauce, 2 Tbsp Soup Soy Sauce, 3 Tbsp Cooking Wine, 1 Tbsp Oligosaccharide, 3 Tbsp Red Pepper Flakes, and a pinch of Black Pepper. Stir well to combine.
Step 4
Add the prepared radish pieces to the sauce mixture. Stir everything together so the radish is coated in the sauce.
Step 5
Cover the pot and bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium and let it simmer for about 15-20 minutes, or until the radish is tender. If the liquid reduces too much during cooking, you can add a little more water.
Step 6
When the radish is fork-tender, drain most of the oil from the canned tuna and add the tuna chunks to the pot. Also, add the sliced onion and chopped green onion.
Step 7
Uncover the pot and continue to simmer over medium-low heat for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly. Ensure the radish and tuna absorb the delicious sauce. Taste and adjust seasoning if needed, adding a little more soy sauce if desired.
Step 8
Transfer the finished Braised Tuna and Radish to a serving dish. Garnish with a sprinkle of toasted sesame seeds for extra flavor and visual appeal. Serve hot with steamed rice for a delightful meal!
