Key Ingredients for Your Bulgogi Hot Pot- Beef for Bulgogi, 300g
- Carrot, 1/3
- Enoki mushrooms, 150g (about 1 small packet)
- Shiitake mushrooms, 4
- Scallion, 1 stalk
- Glass noodles, 1 handful (approx. 30g)
- Seafood broth pack, 1
- Sesame seeds, a pinch (for garnish)
Bulgogi Marinade Ingredients- Soy sauce, 4 Tbsp
- Mirin (cooking wine), 2 Tbsp
- Minced garlic, 1 Tbsp
- Sugar, 1 Tbsp
- Minced scallion, 1 Tbsp
- Sesame oil, 1 Tbsp
- Salt, 1 pinch
- Black pepper, a little
Optional Ingredients for Extra Flavor- Red chili pepper, 1 (for color)
- Soy sauce, 4 Tbsp
- Mirin (cooking wine), 2 Tbsp
- Minced garlic, 1 Tbsp
- Sugar, 1 Tbsp
- Minced scallion, 1 Tbsp
- Sesame oil, 1 Tbsp
- Salt, 1 pinch
- Black pepper, a little

Cooking Instructions
Step 1
Let’s start by preparing all our ingredients. If you have enoki mushrooms in a packet, you’ll just need to trim off the base. Wash all other vegetables thoroughly.

To ensure the glass noodles are perfectly chewy, soak them in cold water for about 30 minutes. This step is crucial for their texture.
Step 3
In a pot, add a suitable amount of water and place the seafood broth pack inside. Bring it to a boil over high heat to create a rich and savory broth. This broth will be the foundation of our hot pot’s flavor.

Gently pat the beef slices with paper towels to remove any excess blood. Removing blood helps eliminate any gamey odors and results in a cleaner taste.

Now, let’s prepare the vegetables. Finely mince about 10cm of the scallion for the marinade; slice the rest diagonally for the hot pot. Trim the base of the enoki mushrooms. For the shiitake mushrooms, remove the tough stems and slice the caps thinly, about 1cm apart. Peel and thinly julienne the carrot. Julienne the onion as well. If using, thinly slice the red chili pepper diagonally for a touch of color.

In a large bowl, combine all the marinade ingredients: 4 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp sugar, 1 Tbsp minced scallion, 1 Tbsp minced garlic, 1 Tbsp sesame oil, a pinch of salt, and a little black pepper. Mix everything well to create a delicious marinade.

Add the beef, from which you’ve removed the blood, to the prepared marinade. Gently massage the meat with your hands to ensure every piece is coated evenly. Letting it marinate will deepen the flavor.

Now, let’s briefly stir-fry. In the pot, add the marinated beef and the julienned onion. Cook over medium heat just until the surface of the beef changes color. Be careful not to overcook, as it can become tough.

Pour 3 cups of the prepared broth over the lightly stir-fried beef and onion. We’re now ready to simmer the hot pot.

As the hot pot begins to boil, use a ladle to skim off any foam or impurities that rise to the surface. This step helps to keep the broth clear and clean.

Time to taste and adjust the seasoning. Take a small sip of the broth and, if needed, add more salt or soy sauce to suit your preference. You can also add a touch more sugar if you like it sweeter.

Once the broth is boiling again, add the julienned carrots, sliced shiitake mushrooms, and the pre-soaked glass noodles. Let it simmer for about 5 more minutes, allowing the vegetables and noodles to cook through.

Finally, add the enoki mushrooms, diagonally sliced scallions, and the red chili pepper (if using). Continue to simmer until the broth reduces to your desired consistency. Cooking it a little longer will intensify the flavors.
