Ingredients and Seasoning

  • 1 handful dried anchovies (about 20-30g)
  • 1 tsp olive oil
  • 1 tsp butter
  • 1 tsp soy sauce
  • 1 tsp cooking wine (mirin or sake)
  • 2 tsp oligosaccharide (or corn syrup)
  • A pinch of sesame oil
  • A pinch of sesame seeds (optional)

Cooking Instructions

Step 1

First, to remove any fishy smell from the dried anchovies, heat a dry frying pan over medium-low heat without any oil. Add the anchovies and stir-fry for 1-2 minutes to evaporate moisture. This removes the fishy taste and makes them crispier.

Step 1

Step 2

It’s best to remove any small fragments or the guts from the fried anchovies. You can tilt the pan and gather the anchovies to one side, or use a fine sieve to gently shake off any debris for a cleaner result.

Step 2

Step 3

Set aside the cleaned anchovies for a moment. In the same frying pan, add 1 tsp of olive oil and 1 tsp of butter. Slowly melt the butter over low heat, being careful not to burn it.

Step 3

Step 4

Once the butter is fully melted and mixed with the oil, add the stir-fried anchovies back into the pan. Stir gently with a spatula to coat the anchovies evenly with the olive oil and butter mixture. Sauté for about 1 minute until you can smell the buttery aroma.

Step 4

Step 5

After the anchovies are coated with butter, turn off the heat temporarily. Push the anchovies to one side of the pan, or transfer them to another bowl for a moment. This helps prevent the seasoning from burning. Now, add 1 tsp soy sauce, 1 tsp cooking wine, and 2 tsp oligosaccharide to the pan to make the seasoning sauce.

Step 5

Step 6

After adding the seasoning sauce, turn the heat back on to very low. Once the sauce starts to bubble, add the anchovies and stir-fry quickly for 1-2 minutes until the seasoning is well absorbed. Finally, turn off the heat and drizzle in a little sesame oil for added savory flavor.

Step 6

Step 7

Transfer the finished anchovy stir-fry to a container once it has cooled slightly. If desired, sprinkle with sesame seeds for a more appealing look. This incredibly simple side dish, made with butter for a non-sticky and savory taste, is perfect for kids and is ready to be enjoyed as a beloved national side dish!
