Healthy Cheonggukjang Okara Stew Using Gangneung Chodang Tofu Okara
This is a healthy and flavorful Cheonggukjang Okara Stew made by combining fermented okara (soy pulp) from Gangneung’s Chodang tofu with homemade cheonggukjang (fermented soybean paste). Enjoy a nutritious and satisfying meal at home!
Broth Ingredients- Beef Tendon (or stewing beef) 50g
- Dried Anchovies (cleaned) 1/2 handful
- Green Onion 1 stalk
Cooking Instructions
Step 1
Place the beef tendon (or stewing beef) in cold water and bring to a boil to create a rich and savory broth.
Step 2
As the broth boils, skim off any impurities that rise to the surface to ensure a clear and clean broth.
Step 3
Chop the kimchi into bite-sized pieces. Tip! For an extra layer of flavor, finely chop the top, crispier part of the kimchi and add it to the stew for a refreshing taste.
Step 4
Slice the green onion diagonally. Prepare all ingredients in advance for easy cooking. Tip! Taking the cheonggukjang and okara out of the freezer the night before and letting them thaw in the refrigerator will shorten cooking time and help retain their flavors.
Step 5
Pour about one ladleful of the prepared broth into a pot. Add the dried anchovies and stir-fry them until fragrant. This step removes the fishy smell and softens the anchovies.
Step 6
Once the anchovies are lightly fried, add the chopped kimchi and stir-fry together. Tip! To prevent the kimchi from sticking to the bottom of the pot, add a little broth while stir-frying.
Step 7
Pour all the beef tendon broth into the pot with the stir-fried kimchi and anchovies, and bring to a boil. Tip! If the stew tastes bland after boiling, adding a little more kimchi juice can enhance the umami and depth of flavor.
Step 8
Finely chop the pre-cooked beef tendon into thin slices to ensure a tender texture and add it to the stew. Tip! While tendon adds a nice chew, it can be tough if not prepared properly, so slicing it thinly is key to a tender and delicious stew.

Add one block of cheonggukjang to the stew. Tip! You can add both cheonggukjang and okara at the same time, but it’s recommended to add the cheonggukjang first and simmer briefly before adding the okara, allowing each to develop its flavor fully.

Next, add the okara and simmer gently over medium heat. Tip! After adding the okara, stir frequently to prevent it from sticking to the bottom of the pot.

When the broth has reduced and thickened to your liking, add the sliced green onion and simmer for a little longer to meld the flavors.
