First, finely mince the washed radish kimchi. Heat 4 tablespoons of perilla oil in a frying pan over medium-low heat. Add the minced radish kimchi and stir-fry until fragrant and slightly softened, being careful not to burn it. Wash the fresh chives thoroughly and drain any excess water. Cut them in half crosswise into pieces about 3-4 cm long. It’s okay if they are a bit longer; they should be easy to slurp up with the noodles and broth.
