Savory Chive and Egg Rice Bowl

Chive and Egg Rice Bowl Ingredients
- 1 bowl of cooked rice
- 30g fresh chives
- 2 slices canned processed ham
- 1/4 onion
- A small amount of green onion (chopped)
- 1 green chili pepper (seeds removed and chopped)
- 1/3 red chili pepper (seeds removed and chopped)
- 1 fresh egg
- 1/3 Tbsp minced garlic
- A little sesame oil
- A little toasted sesame seeds
- A small amount of shredded seaweed (gim)
- Suitable amount of cooking oil
- 1/2 cup anchovy-kelp broth
Seasoning Ingredients
- 1/3 Tbsp oyster sauce
- 2/3 Tbsp soy sauce
- A pinch of black pepper
- 1/3 Tbsp oyster sauce
- 2/3 Tbsp soy sauce
- A pinch of black pepper
Cooking Instructions
Step 1
Prepare all your vegetables by washing them thoroughly and patting them dry. Chop them into small, bite-sized pieces. In a small bowl, crack the egg and lightly whisk it.
Step 2
Cut the canned processed ham slices into small, bite-sized pieces.
Step 3
Heat a pan over medium heat and add a little cooking oil. Add the chopped onion and ham, and stir-fry until lightly golden. Then, add the minced garlic and cook until fragrant. Finally, add the chopped green onion and stir-fry together briefly.
Step 4
Pour in the 1/2 cup of anchovy-kelp broth and add 1/3 Tbsp of oyster sauce. Stir well and bring the mixture to a simmer.
Step 5
Add 2/3 Tbsp of soy sauce and let it bubble gently to allow the flavors to meld. Toss in the chopped green and red chili peppers. Drizzle in a little sesame oil and a pinch of black pepper for added aroma and taste.
Step 6
Add the fresh chives to the pan and stir-fry just until they begin to wilt. Once the chives are slightly softened, pour the whisked egg over the mixture, like drizzling it on top. Turn off the heat immediately before the egg is fully cooked.
Step 7
Serve the warm rice in a bowl, flattening the surface. Carefully spoon the chive and egg mixture from the pan over the rice. Sprinkle with a little toasted sesame seeds and top with shredded seaweed to complete this delightful rice bowl. Enjoy this delicious meal, perfect for dining solo!
