Savory Chive Kimchi and Pork Belly Stir-fry

I’m sharing my favorite ‘Chive Kimchi Pork Belly’ dish, which is perfect for late-night snacks or as a delicious accompaniment to your drinks. Forget store-bought – this homemade version is just as good, if not better!

Main Ingredients

  • Chives, about 2/3 handful (approx. 1 cup)
  • Well-fermented Kimchi, 1 bowlful
  • Pork Belly, 1 serving
  • Onion, 1/2 medium

Chive Salad Dressing

  • Gochugaru (Korean chili flakes), 3 tsp
  • Sugar, 2 tsp
  • Vinegar, 2 tsp
  • Saeu-jeot (fermented shrimp) 1 tsp (including brine)
  • Soy sauce, 2 tsp
  • Minced garlic, 1 tsp
  • Sesame oil, 2 tsp
  • Toasted sesame seeds, a pinch

Cooking Instructions

Step 1

First, prepare the dressing for the chive salad. In a small bowl, combine all the dressing ingredients: gochugaru, sugar, vinegar, saeu-jeot (including some of its brine for extra flavor), soy sauce, minced garlic, sesame oil, and toasted sesame seeds. Mix them well until you have a smooth paste.

Cut the prepared chives into bite-sized pieces, about 3-4 cm long. Thinly slice the onion into strips. Place the cut chives and onions into a mixing bowl and add the prepared dressing.

Gently toss the chives and onions with the dressing until they are evenly coated. Be careful not to overmix, as this can make the chives mushy. Let it sit for a few minutes for the flavors to meld.

Heat a frying pan over medium heat. Add the pork belly slices and cook until golden brown and crispy, turning occasionally. You can leave the rendered pork fat in the pan; it will add flavor to the stir-fry.

When the pork belly is almost cooked, add the dressed chive mixture and kimchi to one side of the pan. Stir everything together with the pork belly and continue to stir-fry for another 1-2 minutes, allowing the flavors to combine. You’ll know it’s ready when you hear a satisfying sizzle and all the ingredients are well-integrated. Serve immediately while hot and enjoy this delicious dish!
