Ingredients

  • 2 bowls of warm cooked rice
  • 2 sheets of square fish cakes
  • 1/2 carrot
  • 1 handful of fresh chives
  • 6 eggs
  • 1 tsp salt
  • 2 Tbsp soy sauce
  • 2 Tbsp sesame oil
  • 1 Tbsp corn syrup (or honey)
  • 2 Tbsp milk
  • 1 Tbsp sesame seeds
  • 2 sheets of kimbap seaweed
  • 2 Tbsp cooking oil

Cooking Instructions

Step 1

First, wash the chives thoroughly. Bring a pot of water to a boil, add a pinch of salt and the chives, and blanch them for just about 30 seconds. This will help retain their crisp texture and fresh aroma.

Rinse the blanched chives under cold water and squeeze out any excess moisture by hand. Place them in a bowl and toss with soy sauce and sesame oil, ensuring they are evenly seasoned.

Julienne the carrot. Heat a pan with a little cooking oil, add the julienned carrots, sprinkle with a pinch of salt, and stir-fry quickly over medium-high heat until tender-crisp.

Julienne the square fish cakes to a similar thickness as the carrots. Lightly oil a pan and sauté the julienned fish cakes. Add soy sauce, corn syrup, and sesame oil, then simmer over medium-low heat until the sauce is well absorbed and the fish cakes are glossy.

In a bowl, combine the warm cooked rice with sesame oil, sesame seeds, and a pinch of salt. Gently mix everything together with a rice paddle, ensuring the rice grains don’t clump.

Lay a sheet of kimbap seaweed on a bamboo mat. Spread the seasoned rice thinly over the seaweed, leaving a small border at the top edge. Arrange the simmered fish cakes, seasoned chives, and stir-fried carrots evenly over the rice. Carefully roll the kimbap tightly from the bottom.

While the fillings are being prepared, crack the eggs into a bowl. Whisk in the milk and salt until smooth. Adding milk will make the omelet extra tender.
