- 3-4 Tbsp curry powder (adjust to taste)
- 1 onion, thinly sliced
- 1/2 carrot, diced
- 1/2 sweet potato, diced
- 1 potato, diced
- 2 Tbsp cooking oil or butter
- 3-4 Tbsp curry powder (adjust to taste)
Cooking Instructions
Step 1
Heat cooking oil or butter in a pot over low heat. Add the thinly sliced onions and sauté until they turn a deep brown color. This caramelization process adds a wonderful sweetness and depth of flavor. Once the onions are well-caramelized, add the curry powder and stir-fry for about 1 minute until fragrant, being careful not to burn it.
Step 2
Add the diced carrots, sweet potatoes, and potatoes to the pot. Stir-fry with the onions and curry mixture for another 2-3 minutes, allowing the vegetables to coat evenly with the spices.
Step 3
Pour in enough water to cover the ingredients. Cover the pot with a lid and bring to a boil. Let it simmer for about 15-20 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking to the bottom of the pot.
Step 4
Spoon the warm cooked rice into an oven-safe dish or individual gratin bowls. Ladle a generous portion of the freshly made curry rice over the rice.
Step 5
Generously sprinkle mozzarella cheese over the top of the curry rice. The cheese will melt beautifully, creating a creamy layer that binds everything together.
Step 6
Bake in a preheated oven at 180°C (350°F) for about 10-15 minutes, or until the mozzarella cheese is melted and golden brown. If you don’t have an oven, you can cover a frying pan with a lid and melt the cheese over low heat. Finally, garnish with a sprinkle of fresh parsley flakes for a beautiful presentation. Enjoy your delicious Curry Gratin!
