Ingredients

  • 400g boiled dried radish greens (siraegi), pre-cooked
  • 3 Tbsp perilla oil (deulgireum)
  • 1 Tbsp sea salt
  • 3 cups short-grain rice, soaked
  • 3 cups dried kelp (dashima) broth

Cooking Instructions

Step 1

Prepare all the ingredients for your delicious Siraegi Bap. Soaking the rice for at least 30 minutes beforehand will make the rice much softer and tastier.

Step 1

Step 2

Cut the 400g of boiled dried radish greens into bite-sized pieces, about 4cm long. If they are too long, they can be difficult to mix with the rice, so preparing them in a suitable size is recommended.

Step 2

Step 3

Place the cut radish greens in a bowl. Add 3 tablespoons of nutty perilla oil to enhance the savory flavor.

Step 3

Step 4

Add 1 tablespoon of sea salt to season the radish greens. You can also use Korean soy sauce (guk-ganjang) instead of salt.

Step 4

Step 5

Gently mix the ingredients with your hands, ensuring the perilla oil and salt are evenly distributed onto the radish greens. This step is crucial for removing any raw taste from the greens and developing a richer flavor.

Step 5

Step 6

Tip: Letting the seasoned radish greens sit for a moment before stir-frying allows the flavors to meld better.

Step 6

Step 7

Heat a pan over medium-low heat and stir-fry the seasoned radish greens for about 3 minutes. Cook until a nutty aroma of perilla oil rises and the greens are slightly tender. This process helps to remove any unwanted odors and deepen the flavor.

Step 7

Step 8

In a pot suitable for cooking rice, add the 3 cups of pre-soaked short-grain rice. Evenly spread the stir-fried radish greens over the rice.

Step 8

Step 9

Pour the 3 cups of prepared dried kelp broth over the stir-fried radish greens. The amount of water should be sufficient to cover the rice and greens. Using kelp broth adds a savory depth that makes the dish even more delicious.

Step 9

Step 10

Cover the pot with a lid and begin cooking the rice. After adding the water and giving it a quick stir, close the lid and let it cook.

Step 10

Step 11

Heat control is key! First, bring the water to a boil over high heat for 3 minutes.

Step 11

Step 12

Once the water boils, reduce the heat to medium and continue to cook for another 3 minutes. Be careful to prevent the rice from sticking to the bottom.

Step 12

Step 13

Finally, reduce the heat to low and let it simmer gently for 10 minutes. This slow cooking allows the rice grains to become fluffy and the delicious flavors of the radish greens to fully infuse into the rice.

Step 13

Step 14

Once the rice is cooked, let it rest for a moment while steaming. Then, gently fluff the rice with a rice paddle to complete your delicious Siraegi Bap!

Step 14

Step 15

Serve with a side of soy sauce seasoning or a drizzle of sesame oil for an extra touch of flavor. Enjoy a hearty and healthy meal with this savory Siraegi Bap!
