Savory Frittata with Leftover Vegetables and Spam

This is a frittata recipe. Enjoy a delicious and nutritious frittata made easily with leftover vegetables from your fridge and Spam. The combination of eggs, vegetables, and ham is superb, further enhanced by the delightful flavor of cheese.
Main Ingredients
- 1 Green Bell Pepper
- 1 King Oyster Mushroom
- 1/3 Onion
- 1/2 can Spam (approx. 100g)

Cooking Instructions
Step 1
First, prepare the vegetables and Spam for the frittata. Wash the green bell pepper, king oyster mushroom, and onion thoroughly, remove seeds, and dice them into bite-sized pieces, about 1cm in size. Dice the Spam similarly. Cutting the vegetables into uniform sizes ensures even cooking and a pleasant texture.
Step 2
Heat a frying pan over medium heat and melt 1 Tbsp of butter. Once the butter is melted, add the diced mushrooms, bell pepper, onion, and Spam. Stir in 0.5 Tbsp of minced garlic, a pinch of salt, and a pinch of black pepper. Sauté the ingredients until they are lightly golden brown and cooked through, for about 5-7 minutes. The Spam will release its own oil as it cooks, so you don’t need to add extra oil.
Step 3
In a large bowl, crack 5 eggs. Add 1/2 paper cup of milk and 1 tsp of salt. Whisk gently with a fork or whisk until well combined. The milk helps to make the egg mixture smoother and more moist. Ensure the salt is added to season the egg mixture properly. Whisk until the mixture is smooth.
Step 4
Pour the well-whisked egg mixture evenly over the sautéed vegetables and Spam in the frying pan. Gently shake the pan or use a spatula to lightly stir to ensure the ingredients are well coated with the egg mixture.
Step 5
Tear 1 slice of cheddar cheese into pieces with your hands and scatter them over the egg mixture. The melting cheese will add depth of flavor and enhance the savory taste of the frittata. You can also use mozzarella cheese along with cheddar if you prefer.
Step 6
Cover the frying pan with a lid and reduce the heat to low. Cook slowly for about 10 minutes. Cooking on low heat prevents burning and ensures the frittata cooks through evenly and remains moist. Wait until the top is set and the cheese is melted.
Step 7
Once the frittata is fully cooked, carefully transfer it to a serving plate. For an extra warm and gooey cheese experience, I added more mozzarella cheese on top and microwaved it for an additional 3 minutes. You can garnish with herbs if desired.
