  • 1/2 Green Onion (sliced, for garnish)

Cooking Instructions

Step 1

1. Making the Savory Garlic Scape and Shrimp Stir-Fry: First, trim any yellowed leaves or tough ends from the garlic scapes, then wash them thoroughly. Cut them into bite-sized pieces, about 3-4 cm long. Bring a pot of water to a boil with a pinch of salt, and once boiling, add the garlic scapes and blanch them for just 30 seconds to 1 minute. This helps reduce their pungent flavor while keeping them crisp. Rinse the blanched garlic scapes under cold water and drain well.

Step 1

Step 2

Heat about 1 tablespoon of cooking oil in a pan over medium heat. Add the prepared shrimp and stir-fry until they turn a vibrant pink. Once the shrimp are starting to turn pink, add the blanched garlic scapes and continue to stir-fry for another 1-2 minutes until the garlic scapes are slightly tender.

Step 2

Step 3

Now, add the sauce ingredients: 3 tablespoons of soy sauce, 3 tablespoons of corn syrup, 3 tablespoons of cooking sake, and 3 tablespoons of water. Stir-fry quickly over medium-low heat until a glossy coating forms and the sauce is well combined with the garlic scapes and shrimp. Finally, turn off the heat, stir in 1 teaspoon of sesame oil and a pinch of toasted sesame seeds for a delicious finish.

Step 3

Step 4

2. Making the Fluffy Rolled Omelet: Finely dice the carrot, chives, and green chili pepper for the omelet. Finely dicing the vegetables will make the omelet look beautiful and taste tender. In a bowl, crack the 3 eggs, add the finely chopped vegetables and a pinch of salt, and whisk well to break down the egg whites.

Step 4

Step 5

Heat a generous amount of cooking oil in a non-stick pan over low heat. Pour in about 1/3 of the egg mixture and spread it thinly. Once the egg begins to set, start rolling it from one side. Once partially rolled, push it to one side of the pan and pour in another 1/3 of the egg mixture, letting it flow underneath and cook. Roll the omelet again to incorporate the new layer of egg. Repeat this process one more time for a thick and appetizing rolled omelet. Wrapping it in a bamboo mat while hot can help shape it nicely.

Step 5

Step 6

3. Cooking the Spicy Sausage Kimchi Stew: Slice the sausage into bite-sized pieces, about 1 cm thick. Cut the aged kimchi into bite-sized pieces as well; about 150g is recommended, especially if it’s very sour. Finely slice the green onion for garnish.

Step 6

Step 7

Lightly oil a pot and sauté the sliced kimchi over medium heat until it softens slightly. Once the kimchi is softened, add the sliced sausage and stir-fry together for another 1-2 minutes. This step helps release the sausage’s fat, adding flavor, and tenderizes the kimchi.

Step 7

Step 8

Pour in the 3 cups of prepared broth into the pot with the sautéed kimchi and sausage. Add the 3 tablespoons of kimchi brine to enhance the spicy and deep flavor. Bring to a boil over high heat, then reduce to medium-low, and simmer for 5-7 minutes to allow the kimchi to become tender and the flavors to meld.

Step 8

Step 9

Towards the end of cooking, add the sliced green onions and simmer for a minute more until the stew is fragrant and the flavors are well combined. Your delicious Sausage Kimchi Stew is ready! You can also add tofu or other vegetables according to your preference.
