Main Ingredients
  • 120g well-fermented kimchi (about 1 cup)
  • 90g onion (about 1/2 small onion)
  • 1 bowl of brown rice (warm)

Seasoning & Others
  • 1/3 tsp sugar (to mellow the kimchi’s sourness)
  • 1 Tbsp olive oil (or cooking oil)
  • 1/2 tsp sesame oil
  • Pinch of toasted sesame seeds or black sesame seeds (for garnish)

Cooking Instructions

Step 1

First, chop the kimchi into bite-sized pieces (about 1cm wide). Slice the onion thinly. Heat 1 tablespoon of olive oil in a pan over medium-low heat. Add the sliced onions and sauté until they become translucent. Push the onions to one side of the pan, add 1/3 teaspoon of sugar to melt, then add the chopped kimchi and stir-fry until well combined. Cooking the kimchi until it softens slightly will enhance its flavor.

Step 2

Add the warm brown rice to the pan with the sautéed onions and kimchi. Using a spatula, gently mix and stir-fry the rice, being careful not to mash the grains. Continue to stir-fry until the rice grains become slightly crisp. Taste and if needed, season with about 1/2 teaspoon of oyster sauce or a pinch of salt. If you have kimchi juice, adding 1-2 tablespoons will add even more depth to the flavor.

Step 3

Transfer the finished fried rice to a serving bowl. For a visually appealing presentation, arrange some of the sautéed sliced onions on top of the fried rice as a garnish.
