  • 3 Tbsp Mixed Bean Flour and Crispy Rice Powder

  • 1.5 Tbsp Soy Sauce
  • 0.5 Tbsp Fish Sauce
  • 1 Tbsp Sesame Oil
  • 0.5 Tbsp Toasted Sesame Seeds
  • Canola Oil, for cooking

Cooking Instructions

Step 1

First, prepare the King Oyster Mushrooms (Santali variety), the star of our dish. They are known for their plumpness and wonderfully chewy texture.

Step 2

Prepare the mix of bean flour and crispy rice powder that will add nuttiness and a delightful crunch. Measure out approximately 3 generous tablespoons. (You can use a pre-made mix, or finely grind roasted soybeans and roasted puffed rice together.)

Step 3

Tear the prepared King Oyster Mushrooms into bite-sized pieces by hand. Tearing them rather than cutting helps them absorb the seasonings better and enhances their texture.

Step 4

Blanch the torn mushrooms in boiling water for just about 10 seconds. Be careful not to overcook them, as they can become mushy. This step helps to remove any slight earthiness and makes them even chewier.

Step 5

Immediately drain the blanched mushrooms in a colander. Ensure all excess water is removed, as remaining moisture can make the stir-fry soggy.

Now, let’s start stir-frying! Add the drained mushrooms to a preheated pan. Pour in 1.5 Tbsp of soy sauce and 0.5 Tbsp of fish sauce. Drizzle a little canola oil around the edges of the pan to help with sautéing.

Finally, add 1 Tbsp of sesame oil for aroma and 0.5 Tbsp of toasted sesame seeds to enhance the nutty flavor.
