- 3/4 Korean Zucchini (medium-sized)
- 1 Onion (small)
- 1 Red Chili Pepper
- 1/2 Tbsp Fermented Shrimp Paste
- 1 Tbsp Soft Tofu Seasoning Sauce

Cooking Instructions
Step 1
First, prepare the Soft Tofu Seasoning Sauce according to Baek Jong-won’s recipe. (Recipe Link: http://blog.naver.com/wjdtj54/221039990413)

If the Korean zucchini has many seeds, scoop them out with a spoon. Otherwise, leave them in. Cut the zucchini into 8 wedges, using 6 wedges and reserving the other 2. Chop them into large pieces.
Step 3
Heat 1 tablespoon of perilla oil in a pan over medium heat. Add the chopped Korean zucchini and stir-fry. Once the zucchini starts releasing moisture, add the minced fermented shrimp paste, sliced onion, and the prepared Soft Tofu Seasoning Sauce. Continue to stir-fry and cook.
Step 4
The moisture released from the onion and zucchini will create a light broth. Cook until the vegetables are tender. Finally, season with a pinch of black pepper, then turn off the heat. Let it simmer until the liquid has mostly reduced.
