Main Ingredients- 1kg fresh button mushrooms
- 10 whole garlic cloves
Marinade Ingredients- 3 cups (600ml) water
- 1 cup (200ml) soy sauce
- 1/2 cup (100ml) oligosaccharide (or corn syrup)
- 1 sheet (10×10 cm) dried kelp (dashima)
- 3 stalks green onion
- 3 dried chili peppers (or fresh red chili peppers)
- 10 slices fresh ginger
- 3 cups (600ml) water

Cooking Instructions
Step 1
[Making the Savory Marinade] First, in a pot, combine 3 cups (600ml) of water, 1 cup (200ml) of soy sauce, and 1/2 cup (100ml) of oligosaccharide. Add the 3 stalks of green onion (cut into large pieces), 3 chili peppers, 10 slices of ginger, and the 10×10 cm sheet of dried kelp. Bring this mixture to a boil over high heat.

Once the marinade begins to boil vigorously, carefully add the 10 whole garlic cloves. The garlic will infuse its flavor into the marinade.
