  • 2 packs of pre-sliced Mero (Chilean Seabass) fillets (approx. 300-400g)
  • 3 fresh eggs
  • 100g green onions, finely chopped
  • 1 tsp salt
  • A pinch of black pepper
  • 1/4 red bell pepper, finely diced

These Mero pan-fries boast a beautiful golden hue that’s sure to whet your appetite! While Mero is often grilled, today we’re making a delicious pan-fried version. The lobster will be simply seasoned and grilled with cheese.

First, take your Mero fillets, which are usually sold for grilling or as steaks. Remove them from the packaging. After thawing, carefully slice the Mero into pieces about 1.5-2cm thick, as if you were filleting it. Slicing them slightly thicker will prevent them from breaking apart during cooking and improve the texture.

Steam the lobster in a steamer basket for about 5-7 minutes until just cooked through. Once steamed, place a slice of cheese on top of each piece of lobster. Heat a frying pan over low heat, add the lobster, cover with a lid, and cook until the cheese is completely melted. For a touch of color and freshness, sprinkle the finely diced red bell pepper over the cheese as it melts.
