Main Ingredients- Pork Belly 2 slabs (approx. 300-400g)
- 1 stalk Green Onion
- 1 Tbsp Toasted Sesame Seeds
Miso Marinade- 2 Tbsp Miso Paste
- 3 Tbsp Mirin (Sweet Rice Wine)
- 1/2 tsp Black Pepper
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligodang (Corn Syrup or similar)
- 1 Tbsp Sesame Oil

Cooking Instructions
Step 1
First, prepare the miso marinade. In a bowl, combine 2 Tbsp miso paste, 3 Tbsp mirin, 1/2 tsp black pepper, 1 Tbsp minced garlic, 1 Tbsp oligodang, and 1 Tbsp sesame oil. Mix everything thoroughly with a spoon until well combined. If the marinade seems too thick, you can add about 1 Tbsp of water to reach your desired consistency.
Step 2
Carefully coat both sides of the pork belly with the prepared miso marinade. For an even deeper flavor penetration, using pork belly with scoring (like shown) is recommended, but regular pork belly will also yield delicious results.
Step 3
While the pork belly marinates, prepare the green onions. Wash them thoroughly and then thinly slice them into matchsticks. These will add a fresh contrast and cut through the richness of the pork.
Step 4
Soak the julienned green onions in cold water for at least 10 minutes to mellow out their sharp, pungent flavor. This step makes them more pleasant to eat raw or alongside the grilled pork. After soaking, drain them well and pat them dry.

Now it’s time to grill the marinated pork belly. Heat your pan over medium-high heat without adding any oil. Place the miso-coated pork belly directly onto the hot pan. The pork belly’s natural fat will render and prevent sticking, while also adding flavor.
Step 6
Sear the pork belly on all sides over medium-high heat until beautifully browned and slightly crispy. Once seared, reduce the heat to medium and continue cooking, turning occasionally, to ensure it cooks through evenly without burning. Keep an eye on it to prevent scorching, aiming for juicy, perfectly cooked pork belly.
Step 7
Once the miso pork belly is perfectly grilled, arrange the prepared green onion matchsticks on top. Finish by sprinkling generously with toasted sesame seeds. The combination of the rich, savory miso flavor, the succulent pork belly, and the fresh green onions is truly exceptional. Enjoy this delicious dish with a side of warm rice!
