Mushroom Bulgogi: A Delicious Side Dish

Main Ingredients- 250g Beef (Bulgogi cut)
- 1 handful Oyster mushrooms
- 2 King oyster mushrooms (halved and sliced)
- 1/2 Onion
- 1/4 Green onion
- 1 handful Rice cakes (tteok, optional)
Seasoning- 2 Tbsp Minced garlic
- 3 Tbsp Minced green onion
- 3 Tbsp Soy sauce
- 1/2 Tbsp Sesame oil
- A pinch of Black pepper
- 1/2 Tbsp Sugar

Cooking Instructions
Step 1
Let’s start by preparing the delicious marinade for the bulgogi. In a bowl, combine 2 Tbsp minced garlic, 3 Tbsp minced green onion, 3 Tbsp soy sauce, 1/2 Tbsp sesame oil, a pinch of black pepper, and 1/2 Tbsp sugar. Mix well.
Step 2
Add the 250g of beef to the prepared marinade and gently mix it with your hands, ensuring each piece is coated. Let it marinate for about 5 minutes for the flavors to meld beautifully.
Step 3
Now, let’s prepare the vegetables and mushrooms. For the oyster mushrooms, trim the tough ends and tear them into bite-sized pieces. Slice the king oyster mushrooms in half lengthwise and then into about 0.5cm thick slices. Thinly slice the onion and cut the green onion into diagonal pieces.
Step 4
Prepare the rice cakes (tteok) for a chewy texture. You can use any kind you prefer, such as tteokbokki tteok or mill tteok. If your rice cakes are hard, soak them in water for a short while to soften.
Step 5
Heat a pan over medium-high heat. Spread the marinated beef thinly in the hot pan and stir-fry quickly until it’s cooked through. Use chopsticks or a spatula to break up the meat as it cooks to prevent clumping.
Step 6
Once the beef is mostly cooked, use kitchen scissors to cut it into bite-sized pieces directly in the pan. Then, add the prepared oyster mushrooms, king oyster mushrooms, onion, and green onion. Stir-fry everything together until the vegetables are tender and well combined with the beef.
Step 7
Add the prepared rice cakes to the pan and continue to stir-fry until they are cooked through and tender. If you’re not using rice cakes, you can skip this step.
Step 8
Once everything is cooked, turn off the heat. Drizzle with a little extra sesame oil for a fragrant finish. This final touch enhances the overall aroma and flavor of the dish.
