- A little sesame oil
- A little sesame seeds
- 1 Tbsp minced garlic
- 1 Tbsp doenjang (Korean soybean paste)
- 1 Tbsp tuna extract (or soy sauce)
- 1 Tbsp oligosaccharide (or sugar)
- A little sesame oil
- A little sesame seeds
Cooking Instructions
Step 1
First, prepare the napa cabbage. Wash it thoroughly under running water. Bring a pot of water to a boil. Briefly blanch the napa cabbage leaves in the boiling water for about 30 seconds to 1 minute, just until they soften slightly. Be careful not to overcook, as they can become mushy.
Step 2
Immediately rinse the blanched cabbage under cold water to cool it down. Gently squeeze out excess water with your hands. Cut the cabbage into bite-sized pieces, about 4-5 cm long. Finely chop the green onion.
Step 3
In a mixing bowl, combine the squeezed cabbage and chopped green onion. Add all the dressing ingredients: 1 Tbsp minced garlic, 1 Tbsp doenjang, 1 Tbsp tuna extract, and 1 Tbsp oligosaccharide. Gently mix everything together with your hands until the cabbage is evenly coated with the dressing. You can adjust the amount of doenjang based on your preference for saltiness.
Step 4
Finally, add a drizzle of sesame oil for a nutty aroma and a sprinkle of sesame seeds. Give it one last gentle toss. Your delicious napa cabbage salad with soybean paste dressing is now ready! It’s great served immediately or chilled from the refrigerator for a refreshing side dish.
