  • 2 Tbsp Perilla oil (or sesame oil)
  • 1 Tbsp Toasted sesame seeds
  • Pinch of black pepper

Finely chop the green onions. Wash the baby napa cabbage thoroughly and cut it into bite-sized pieces, about 2-3 cm wide. It’s important to keep the cabbage nice and crisp.

Bring a large pot of water to a rolling boil over high heat. Once boiling, carefully spread the somyeon noodles in a fan shape into the pot. When the noodles rise to the surface, add 1 cup of cold water. When it boils up again, add another cup of cold water. Repeat this process 2-3 times. This method ensures the noodles are cooked to a perfectly chewy and springy texture. Immediately drain the cooked noodles and rinse them thoroughly under cold running water, gently rubbing them as you rinse. This removes excess starch, preventing the noodles from sticking together and ensuring a cleaner taste. Finally, place the noodles in a colander to drain any excess water completely.

In a spacious bowl, combine all the ingredients for the special dressing: 1.5 Tbsp allulose, 1.5 Tbsp soy sauce, 0.5 Tbsp minced garlic, 2 Tbsp perilla oil, 1 Tbsp toasted sesame seeds, and a pinch of black pepper.
