Cooking Instructions
Step 1
First, slice the flat fish cakes into bite-sized strips. Briefly blanch them in boiling water for about 1 minute. This softens them and removes impurities, leading to a cleaner taste. After blanching, drain them in a colander without rinsing in cold water.
Step 2
Thinly slice the onion into strips and thinly slice the green onion on an angle. Prepping the vegetables like this makes stir-frying much easier.
Step 3
Remove the seeds from the red chili peppers and slice them thinly. This step is optional; you can substitute with Cheongyang peppers for a spicy kick, or omit them entirely if cooking for children.
Step 4
Heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and green onions and stir-fry until fragrant. Then, add the blanched flat fish cakes and continue to stir-fry until the onions become translucent.
Step 5
Now, add all the sauce ingredients (1 Tbsp oyster sauce, 2 Tbsp braising soy sauce, 1 tsp minced garlic, 2-3 Tbsp oligosaccharide, 1 Tbsp cooking wine) and the sliced red chili peppers to the pan. Stir everything well to ensure the sauce evenly coats the fish cakes and vegetables. Stir-fry for about 5 minutes. Taste as you go and adjust the amount of oligosaccharide to achieve your desired level of sweetness for an even more delicious result.
Step 6
Once all the ingredients are well-stirred and the sauce has coated the fish cakes, turn off the heat. Finally, drizzle with a little sesame oil and sprinkle with sesame seeds for a fragrant finish. Your savory oyster sauce stir-fried flat fish cakes are ready!
