I tried the pan-fried egg curry rice bowl recipe featured on the TV show ‘Homegrown Chef Season 3’. While watching the show, I was inspired to make it right away! I substituted the curry powder called for in the broadcast with a convenient 3-minute curry pack that I had at home, so the result is slightly different. This dish features savory pan-fried eggs with a soft interior, sweet caramelized onions, and a rich curry sauce, making it a satisfying and simple home-cooked meal that’s perfect for a quick bite.

Step 1
First, prepare the boiled eggs. Gently pat the surface of the boiled eggs dry with a paper towel. This helps prevent oil splattering when you pan-fry the eggs.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the prepared eggs. Cover the pan with a lid and gently roll the eggs while cooking over low heat. This process will toast the egg whites to a golden brown, adding a wonderful depth of flavor and helping the sauce absorb better. While you can use regular hard-boiled eggs, pan-frying them makes them much more savory and delicious.
Step 3
Slice half an onion thinly. Temporarily set aside the pan-fried eggs. Add the sliced onion to the same pan and sauté until it becomes translucent, then continue to cook until it turns a light brown color. Cooking the onions until they caramelize brings out their natural sweetness and enhances the curry’s aroma and flavor. Ensure you cook them sufficiently for the best taste.
Step 4
Now it’s time to make the curry. If you have curry powder, you can follow the recipe instructions. However, I used a 3-minute curry pack I had on hand, which is very convenient as it just needs to be heated. Simply place the 3-minute curry pack into the pan with the sautéed onions. No additional water is needed as the curry pack contains its own sauce.
Step 5
Mix the 3-minute curry well with the sautéed onions. Gently heat over low heat until the curry just begins to simmer. Once all ingredients are well combined, turn off the heat. This is a remarkably simple and quick way to complete a delicious pan-fried egg curry rice bowl. Serve it over warm rice and enjoy!
