Key Ingredients

  • 400g square fish cakes
  • 2 Tbsp sesame oil
  • 2 Tbsp soy sauce
  • 2 Tbsp sugar
  • 3 Tbsp cooking wine (cheongju)
  • 5 Tbsp water
  • 1 Tbsp minced garlic
  • A pinch of black sesame seeds

Cooking Instructions

Step 1

1. To achieve a cleaner and tastier result, it’s best to remove the excess oil from the fish cakes. You can do this by blanching them briefly in boiling water or by rinsing them under hot running water. If blanching, drain the fish cakes thoroughly after boiling. (For larger quantities, boiling is more convenient.)

Step 1

Step 2

2. Once drained, cut the square fish cakes into roughly six equal, bite-sized pieces. Heat 2 tablespoons of sesame oil in a non-stick pan over medium-low heat. Add the cut fish cakes and stir them frequently to coat evenly with the sesame oil, allowing them to develop a light golden hue. Be careful, as fish cakes can burn easily!

Step 2

Step 3

3. Once the fish cakes are nicely golden brown, it’s time to prepare the flavorful braising sauce. In a small bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of sugar, 3 tablespoons of cooking wine (cheongju), 5 tablespoons of water, and 1 tablespoon of minced garlic. Pour this mixture over the pan-fried fish cakes.

Step 3

Step 4

4. The key to ensuring the sauce evenly coats the fish cakes is to stir them frequently with a spatula as they simmer. Continue to cook over medium heat until most of the liquid has evaporated and the sauce has thickened, coating the fish cakes well. Keep stirring to prevent sticking and burning.

Step 5

5. Transfer the finished fish cake stir-fry to a serving dish. Garnish generously with black sesame seeds for an extra touch of nutty flavor. Your delicious sesame oil fish cake stir-fry is now ready to be enjoyed with a warm bowl of rice!
