Savory Perilla Oil and Chive Bibim Guksu

Try making a delicious bibim guksu (Korean mixed noodles) by tossing noodles with fresh chives and fragrant perilla oil. This recipe is perfect for a quick and flavorful meal.
Ingredients- 100g somen noodles
- 50g chives
- 2 Tbsp perilla oil

Step 1
Prepare the somen noodles. Measure out 100g for a single serving.

Wash the chives thoroughly and finely chop them into small pieces.

In a small bowl, combine the soy sauce, katsuobushi mentsuyu (or anchovy sauce for a similar umami flavor), sugar, and vinegar. Stir well to create the seasoning sauce. Adjust sweetness and sourness to your preference.

Bring a large pot of water to a rolling boil. Add a pinch of salt to prevent the noodles from sticking. Add the somen noodles and gently loosen them with chopsticks to prevent clumping. Cook for about 3-4 minutes, or until al dente.

Drain the cooked noodles and rinse them thoroughly under cold running water. This step is crucial for achieving a chewy texture.

Place the chopped chives at the bottom of a serving bowl.

Arrange the drained and rinsed somen noodles on top of the chives.
