Pollack Roe Porridge
Do you love the unique savory flavor of pollack roe (Myeongnan)? Once you fall for its charm, it’s hard to resist! This time, we’ve created a wonderfully smooth porridge by adding pollack roe. It’s a delightful dish that’s perfect for breakfast or when you need something comforting and easy to digest.
Main Ingredients- 2 low-sodium pollack roe (Myeongnan)
- 152g cooked rice (day-old rice recommended)
- 320ml water
Cooking Instructions
Step 1
First, prepare the pollack roe and cooked rice. Ensure the pollack roe is fresh. Using day-old rice will result in a smoother porridge texture.
Step 2
Carefully remove the membrane from the pollack roe. Place the pollack roe on a cutting board. Gently score the underside of the roe lengthwise with the back of a knife. Then, starting from the top and moving down, gently scrape the roe out with the back of the knife. This method cleanly separates the delicate roe pearls.
Step 3
In a blender, combine the 152g of cooked rice and 320ml of water. Blend until the mixture is thick and resembles porridge, with no distinct rice grains visible. The key is to achieve a smooth, thick consistency.
Step 4
Pour the blended rice mixture into a pot and bring it to a gentle simmer over medium heat. Stir continuously with a spatula to prevent lumps from forming. Once it starts to boil, reduce the heat to low and let it cook slowly.
Step 5
When the porridge begins to bubble, it’s time to add the prepared pollack roe. Add all of the roe to the pot. Break up any clumps and stir well to distribute the roe evenly throughout the porridge.
Step 6
Finely chop 10g of chives. Wash them thoroughly, pat them dry, and then chop them into very small pieces. These will serve as a colorful and fragrant garnish.
Step 7
After adding the pollack roe and simmering for another moment, stir in 1 Tbsp of perilla oil. Finally, season with 1/2 tsp of salt, adjusting to your preference. (Remember that pollack roe is already salty, so taste and adjust the salt accordingly.) Stir everything together, and your delicious pollack roe porridge is ready! Garnish with the prepared chives and enjoy.
