We’ve created a unique rice pizza using pork belly, a healthy and safe ingredient grown on our land that captivates our taste buds. This homemade pizza, featuring flavorful pork belly and fresh vegetables on a chewy rice dough, is a delicious treat for everyone to enjoy.
Chewy Rice Pizza Dough Ingredients- 300g High-gluten Rice Flour
- 4g Instant Dry Yeast
- 20g Organic Brown Sugar
- 20g Unsalted Butter
- 210g Warm Milk
- 5g Salt
Abundant Pizza Topping Ingredients- 200g Fresh Pork Belly
- 1/2 Onion
- 1/4 Green Bell Pepper
- 1/4 Red Bell Pepper
- 1/4 Yellow Bell Pepper
- 2 Button Mushrooms
- 1 Frank Sausage
- Plenty of Mozzarella Cheese

Cooking Instructions
Step 1
First, prepare the ground pork for the pizza sauce. Marinate it with 1 tsp of cooking wine (like ‘cheongju’ or mirin) and a pinch of black pepper. Heat a lightly oiled frying pan and cook the marinated pork until browned. Drain off any excess oil while it cools; this will enhance the sauce’s flavor while reducing greasiness.
Step 2
Now, let’s make the pizza sauce. Heat 4 Tbsp of olive oil in a pan over medium-low heat. Add the minced garlic and minced onion, sautéing until fragrant and the onion becomes translucent. Stir in the tomato paste, 100ml of water, and 2 Tbsp of hot sauce. Bring to a simmer, stirring occasionally over medium heat.
Step 3
Once the sauce starts to bubble, add 20g of organic brown sugar, 1 tsp of oregano, 1/2 tsp of parsley flakes, 1 tsp of lemon juice, 2 bay leaves, 1/4 tsp of salt, and 1/4 tsp of black pepper. Stir well to combine. Add the pre-cooked ground pork and continue to simmer over low heat for about 5 minutes, stirring constantly. Once the sauce is thickened, remove it from the heat, discard the bay leaves, and let the sauce cool completely. Any leftover sauce can be cooled, stored in the freezer, and used for future pizzas.
Step 4
Prepare your pizza toppings! Feel free to use whatever ingredients you have in your refrigerator. Chop the onions, bell peppers, and other vegetables into bite-sized pieces. It’s especially important to lightly sauté vegetables with high water content, like mushrooms or peppers, before adding them to the pizza. This step helps prevent the pizza from becoming watery after baking. For the frank sausage, pouring hot water over it briefly can help remove excess grease, making it taste cleaner.
Step 5
The star of our pork belly pizza! To prepare the pork belly, bring a pot of water to a boil with 1 Tbsp of cooking wine, 6 whole peppercorns, a pinch of cloves, and a sprig of rosemary. Blanch the pork belly for just 1-2 minutes. Overcooking will make it tough when eaten on the pizza. After blanching, cut the pork belly into bite-sized pieces and marinate them with 1 tsp soy sauce, 1 tsp sesame oil, and a pinch of black pepper. Alternatively, if you prefer the rich flavor of unblanched pork belly, you can skip this step and add it raw to the pizza. The choice is yours!
Step 6
Time to make the rice pizza dough. After kneading, let the dough rest for a 10-minute intermediate proof. (Rice flour dough does not require a first fermentation like wheat flour dough.) Once the intermediate proof is complete, roll out the dough thinly. Place it onto a buttered pizza pan and prick the surface all over with a fork. Spread the prepared pizza sauce evenly over the dough. Then, let it proof in a warm place for about 30 minutes. This final proof will make the rice crust soft and airy.
Step 7
Now it’s time to add the delicious toppings! Start by evenly distributing your chosen vegetable toppings, based on what you have available. Next, layer the blanched and marinated pork belly, followed by the thawed corn, peas, and diced carrots. Arrange the colorful toppings attractively to make your pizza visually appealing.
Step 8
And now for the grand finale, showcasing the pork belly! After arranging the pork belly prominently, generously cover the entire pizza with mozzarella cheese. The charm of homemade pizza is in its abundant toppings! Bake in a preheated oven at 190°C (375°F) for 15-18 minutes, or until the cheese is melted and golden brown and the crust is crisp. Adjust the temperature and time according to your oven’s specifications.
Step 9
