Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil. Once boiling, add a pinch of salt and the spaghetti pasta for 3 servings. Cook for about 6-7 minutes, or 1 minute less than the package instructions, until al dente. Stir occasionally to prevent sticking.
Step 2
Drain the cooked pasta using a colander. Spread it out on a large plate or in a pan. Drizzle 1-2 tablespoons of olive oil over the pasta and toss gently to coat. This prevents the noodles from clumping and makes them easier to stir-fry. Continue cooking for about 7 minutes.
Step 3
Prepare the vegetables and sausages. Slice the sausages into bite-sized pieces, about 1cm thick, on an angle. Core and roughly chop the tomato. Slice the king oyster mushroom thinly and thinly slice the onion. If you like a bit of heat, deseed and finely chop the chili peppers.
Step 4
Heat 2 tablespoons of cooking oil (or olive oil) in a large pan over medium heat. Add the sliced sausages, onion, and king oyster mushrooms. Sauté until lightly browned and fragrant. Cook until the onions become translucent for optimal flavor.
Step 5
Once the mushrooms, onions, and sausages are partially cooked, add the prepared pasta to the pan. Stir well to combine with the other ingredients, ensuring the pasta doesn’t stick to the bottom.
Step 6
Now, let’s add the flavor. Pour in the low-sodium soy sauce (3 Tbsp), sugar (2 Tbsp), and lime juice concentrate (2 Tbsp) over the pasta. Stir everything together. Add the chopped tomatoes and chili peppers, and continue to stir-fry. It’s important to cook until the tomatoes soften slightly and the sauce melds together.
Step 7
Finally, sprinkle in the coarsely ground black pepper (1/2 Tbsp) and add another 2-3 tablespoons of olive oil. Stir quickly to ensure all ingredients are well combined with the sauce. Your delicious Sausage Tomato Pasta is ready! Serve immediately while hot.
