Ingredients

  • 1 Onion
  • 1 King Oyster Mushroom
  • 1 Cucumber
  • 4 Tbsp Soy Sauce
  • Cooking Oil
  • 4 cloves Garlic

Cooking Instructions

Step 1

First, prepare the ingredients. Slice the onion thinly or dice it. Trim the base of the king oyster mushroom and slice it into bite-sized pieces (about 0.5cm thick). Remove the ends of the cucumber and cut it into thick matchsticks. Peel and thinly slice the garlic cloves. (Minced garlic can also be used.)

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the king oyster mushrooms and cucumber and sauté. Once the mushrooms are lightly browned and the cucumber starts to look translucent, transfer the sautéed vegetables to a separate bowl. This helps maintain their texture.

Add another tablespoon of cooking oil to the same pan. Add the sliced onion and garlic and sauté until the onion becomes translucent and the garlic becomes fragrant. Be careful not to burn the garlic by cooking over medium-low heat.

Add the previously sautéed mushrooms and cucumber back into the pan with the translucent onion and garlic.

Pour 4 tablespoons of soy sauce evenly over all the ingredients. Increase the heat to medium-high and continue to stir-fry for about 10 minutes, allowing the soy sauce to coat everything well. Stir occasionally to prevent sticking. The vegetables will become glossy as the sauce reduces.
