Main Ingredients

  • 1 squid tentacle (cleaned and cut)
  • 8 cocktail shrimp (peeled and deveined)
  • 2 Tbsp chopped green bell pepper
  • 1 Tbsp chopped carrot
  • 1 Tbsp chopped onion
  • 1 bowl cooked rice (approx. 200g, preferably day-old)
  • 2 tsp sake (or mirin)
  • Generous amount of mozzarella cheese (to taste)
  • Pinch of dried parsley (for garnish)

  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp butter (or cooking oil)

Cooking Instructions

First, to remove any unpleasant odor and enhance the flavor, finely chop the squid tentacles into bite-sized pieces (about 1cm).

Rinse the cocktail shrimp and pat them dry. Finely chop the green bell pepper, carrot, and onion. Dicing the vegetables finely will help them blend well with the rice.

In a small bowl, combine the chopped squid and cocktail shrimp with 2 tsp of sake (or mirin) and let it marinate for about 5 minutes. This step helps to tenderize the seafood and remove any gaminess. Heat 1 Tbsp of butter in a pan over medium heat until melted. You can substitute with cooking oil if preferred.

Add the chopped vegetables (green bell pepper, carrot, onion) to the melted butter and sauté for 1-2 minutes until they become slightly tender and translucent. Then, add the marinated squid and shrimp to the pan and stir-fry together. Season with a pinch of salt and black pepper. Add the cooked rice and break up any clumps with your spatula, stirring well to combine all the ingredients. Continue to stir-fry until heated through, ensuring the rice is evenly distributed. Taste and add more salt if needed to adjust the seasoning.
