Ingredients

  • Fresh Aster Scaber (Chwinamul) 250g
  • 1 tsp minced garlic
  • 1.5 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • A pinch of salt (to taste)

Cooking Instructions

Step 1

Thoroughly rinse the fresh chwinamul under running water to remove any dirt or debris. Bring a pot of water to a boil. Once boiling, add the chwinamul and blanch for about 1 minute. Be careful not to overcook, as it can become too soft.

Step 1

Step 2

Immediately after blanching, transfer the chwinamul to a bowl of cold water to rinse. This helps to maintain its vibrant green color and a crisp texture.

Step 2

Step 3

Gently squeeze out as much water as possible from the rinsed chwinamul using your hands. Excess water can dilute the seasoning. Once drained, cut the chwinamul into bite-sized pieces, about 3-4 cm in length.

Step 3

Step 4

In a mixing bowl, combine the drained and chopped chwinamul with 1 tsp of minced garlic, 1.5 Tbsp of sesame oil, a pinch of toasted sesame seeds, and a pinch of salt. Gently toss or mix with a spatula until all the ingredients are well combined and evenly seasoned. Taste and add more salt if needed.

Step 4

Step 5

Transfer the seasoned chwinamul stir-fry to a serving dish. The delicate, herbaceous aroma of the chwinamul, complemented by the nutty sesame oil and toasted sesame seeds, creates a truly delicious and satisfying side dish.
