Sukkkat Dubu Muchim Ingredients
  • 1 block (approx. 300g) firm tofu
  • 1 bunch fresh chrysanthemum greens
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce or salt (adjust to taste)
  • 1 Tbsp sesame oil
  • 1 Tbsp plum extract (or plum syrup)
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the chrysanthemum greens. Remove any yellowed leaves or tough stems. Wash them thoroughly under running water to remove any dirt or debris. Bring a pot of water to a boil, add a pinch of salt, and blanch the greens for about 30 seconds to 1 minute, just until they wilt and turn a vibrant green. Immediately remove them from the boiling water.

Step 2

Immediately rinse the blanched greens under cold running water to stop the cooking process and preserve their bright color and crisp texture. Gently squeeze out excess water; avoid pressing too hard to retain their flavor and nutrients. If desired, you can chop the greens into bite-sized pieces after squeezing.

Step 3

To remove excess water from the tofu, wrap it in paper towels and microwave for about 1 minute, or briefly boil it. Then, crumble the tofu in a bowl using a fork or your hands until it’s mostly broken down but still has some texture. Avoid making it completely smooth for a better mouthfeel.

Step 4

Add the prepared chrysanthemum greens to the bowl with the crumbled tofu. Gently mix them together. Be careful not to overmix or mash the greens, as this can release their delicate flavor.

Step 5

Now, add the seasoning ingredients to the bowl. Combine 1 tablespoon of minced garlic, 1 tablespoon of soy sauce or salt (adjust to your preference), 1 tablespoon of sesame oil for its nutty aroma, and 1 tablespoon of plum extract for a touch of sweetness and tang. Gently mix everything until well combined.

Step 6
