  • 1 Tbsp Gochugaru (Korean chili powder)
  • 2 Tbsp Jin-ganjang (Korean soy sauce for soup and stew, adds umami)
  • 1 Tbsp Fish Sauce (enhances flavor)
  • 2 Tbsp Cheongju (rice wine, removes odor and tenderizes)
  • 2 Tbsp Oligodang (corn syrup, for mild sweetness)
  • 1 Tbsp Minced Garlic (essential for the seasoning)
  • 2 Tbsp Minced Scallions (adds fresh aroma)
  • 1 small Red Chili, minced (for spiciness and color)
  • 1 small Green Chili, minced (for clean spiciness)
  • 3 Tbsp Water (to adjust seasoning consistency)

First, let’s make the delicious seasoning mix that will determine the taste of your seasoned gim. In a bowl, combine 1 Tbsp gochugaru, 2 Tbsp jin-ganjang, 1 Tbsp fish sauce, 2 Tbsp cheongju, 2 Tbsp oligodang, 1 Tbsp minced garlic, and 2 Tbsp minced scallions. Add the minced red and green chilies (1 each) for spiciness and color, and finally, 3 Tbsp of water. Stir well until all ingredients are thoroughly mixed. This amount of seasoning is enough for approximately 15 sheets of dried gim. Feel free to add a little gochujang or sugar to your preference!

Next, prepare the gim. Lightly roast the gim sheets on a dry pan over low heat, flipping them frequently until they are crisp. Be careful not to burn them; the key is to roast until you can smell their toasty aroma. Once roasted, tear or cut the gim into bite-sized pieces (about 2-3 sections), or place them in a large plastic bag and crumble them by hand. They should be crunchy enough to make a satisfying sound when broken.

Now it’s time to mix the gim with the seasoning! In the plastic bag or large bowl containing the crumbled gim, start by adding about 2/3 of the prepared seasoning mix. It’s important to taste as you go and adjust the seasoning to your liking. We prefer it a little less salty, so we saved some seasoning for later. Gently toss the gim and seasoning together with your hands or a spatula, being careful not to break the gim too much. The goal is to coat the gim evenly without crushing it.

Transfer the seasoned gim to a nice serving dish. It’s already delicious, but we’re going to enhance the nutty flavor even further. Sprinkle generously with 2 Tbsp of whole sesame seeds. The roasted sesame seeds will add a wonderful depth of flavor and a delightful crunch with every bite.
