- Perilla leaves 5-6 leaves
Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a large pot over high heat. Once boiling, add the noodles. Stir gently to prevent them from sticking together. When the water starts to bubble up after adding the noodles, pour in about half a cup of cold water. Repeat this process 2-3 times. This technique helps the noodles cook to a perfect al dente texture.
Step 2
Once the noodles are cooked to your liking, immediately drain them in a colander. Rinse them quickly under cold running water. This rinsing removes excess starch, resulting in chewier noodles, and cools them down to prevent overcooking. Gently rub the noodles while rinsing. Drain thoroughly until all excess water is removed.
Step 3
While the noodles are cooking, let’s prepare the flavorful sauce. In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp plum extract, 1 Tbsp honey or oligosaccharide, 1 Tbsp sesame oil (or perilla seed oil), and 1/2 Tbsp minced garlic. Whisk well. Now, add 2-3 Tbsp of ground perilla seeds for that signature nutty flavor. The perilla seeds can thicken the sauce, so adding a little more plum extract will help achieve a smoother consistency for easier mixing.
Step 4
Place the drained noodles into a mixing bowl and generously spoon the prepared sauce over them. Now, it’s time to mix everything together! Gently toss and mix the noodles with the sauce until evenly coated. For an even richer nutty flavor, you can add another 1/2 Tbsp of sesame oil or perilla seed oil at this stage and mix again.
Step 5
Finally, thinly julienne the washed perilla leaves and arrange them attractively on top of the mixed noodles. The addition of fragrant perilla leaves elevates both the taste and aroma of the dish. You can also sprinkle some toasted sesame seeds for garnish. Mix well and enjoy your delicious bibim guksu right away!
