- Carrot, 1/10
- Scallion, about 5g
- Eggs, 4
- Cooked Rice, 1 bowl (preferably warm)
Seasoning and Extras- Salt, 1 tsp
- Black Pepper, 1 pinch
- Cooking Oil, 2 Tbsp
- Curry Powder, 1 Tbsp
- Salt, 1 tsp
- Black Pepper, 1 pinch
- Cooking Oil, 2 Tbsp
- Curry Powder, 1 Tbsp
Cooking Instructions
Step 1
Rinse the peeled and deveined shrimp under cold water. This step helps to remove any impurities from the shrimp, ensuring a cleaner flavor in the final dish.
Step 2
Finely mince the carrot. Heat 1 tablespoon of cooking oil in a pan over medium-low heat and sauté the minced carrots until slightly softened. Pre-cooking the carrots brings out their natural sweetness and improves their texture.
Step 3
Crack the 4 eggs into a large bowl. Whisk them thoroughly with a fork or whisk until the egg whites and yolks are well combined and slightly frothy. Beating the eggs well ensures the batter will mix evenly.
Step 4
Add the salt (1 tsp) and a pinch of black pepper to the beaten eggs and mix well. This seasons the eggs and helps to balance the overall flavor of the pancakes.
Step 5
To the egg mixture, add the cooked rice (1 bowl), rinsed shrimp, finely chopped onion, sautéed carrots, and chopped scallion. Sprinkle in the curry powder (1 Tbsp). Mix everything together thoroughly with a spatula or spoon, ensuring there are no clumps. The curry powder adds a wonderful aroma and a lovely color.
Step 6
Add the remaining 1 tablespoon of cooking oil to a frying pan and preheat it over low heat. Once the pan is warm, scoop portions of the rice mixture and carefully place them into the pan, forming small, round pancakes. Aim for a moderate thickness so they cook through evenly.
Step 7
Cook the pancakes over low heat without flipping them immediately. Once the edges start to set and turn golden brown, carefully flip them using a spatula to cook the other side until golden as well. The pancakes are ready when the egg is fully cooked and firm. Covering the pan with a lid can help ensure the inside cooks through evenly.
Step 8
Arrange the beautifully cooked Shrimp and Egg Rice Pancakes on a plate. They are delicious served on their own, or you can enjoy them with ketchup, mayonnaise, or your favorite dipping sauce. Best enjoyed while warm!
